We want to share a space that is dedicated to asking you to create room for your own dreams as you celebrate theirs by enjoying a collective of events sitting with a beautiful hand crafted coffee drink, botanical tea infusion, interesting cocktail, made from scratch pastry or a delicious plate of specialty food. Bring your journal, sit with your thoughts, allow a frisson of an idea to pop into your head for a new beginning of your own. Celebrate your successes and milestones with us with a private bespoke party in our boutique gathering space, Estrella, close the doors in our private dining room and create your own plan for disruptive innovation that will take your business to a new place or reserve the entire house to host a spectacular event unique to your vision.

Welcome to Pop at the Old Colorado City Hall in the beautiful Westside community and historic district of Old Colorado City. We are a continuation of many dreams that have grown and flourished under one roof since the building was bulit in 1888. This building began its story as a firehouse and jail, became the Ward School, the first Old Colorado City City Hall, a Coca Cola Bottling Plant, Butch’s Diner, The Queen Café, Hibbits Antique Store, Agia Sophia Coffee Shop, Daisy in a Bottle, and many other dreams.
With the conclusion of a purpose-driven renovation, 2902 West Colorado is ready for the next generation of dreamers equipped with a building that welcomes all with equity and sustainability. Every decison for its next steps forward focused on inclusiveness with full ADA accessibility, acoustic and light management for better communication, sustainable infrastructure for reduced water, electrical and gas usage and studied execution of justice for the careful rehabilitation of a valued historical building.
Our community gathering and culinary workspaces were created for comfort and beauty with a focus on the gift of natural light, ergonomic and comfortable seating and work areas and beauty to comfort and inspire.

Launch Coffee House
Launch Coffee welcomes you to enjoy pop-up opportunities and collaborations with our shared kitchen customers, small culinary/beverage businesses in the community and our in-house visionaries. We strive to prepare thoughtfully crafted coffee, botanical tea and specialty drinks that are carefully sourced for deliciousness and good health as well as a world balance of equity and sustainability. Our shared kitchen is delighted to share their unique specialty items including pastries, light breakfast offerings, fabulous sherbet and more. Our in-house specialties include house made specialties created with quality ingredients and a focus on local sourcing strengthening our community partnerships with local farms, apiaries and ranchers.

Pop Shared Kitchen
Pop Shared Kitchen celebrates the small culinary business and the scaling of dreams by offering affordable, cutting edge work space designed for efficiency of preparation, ergonomic work flow and multiple opportunities for interesting pop-up, retail and dining space. Our job is to reduce barriers and increase opportunities for safe, comfortable business growth with professional innovation and collaborative support.
Itty Bitty Bakery Co-Op
Itty Bitty Bakery Co-Op is our favorite launch pop-up retail spot available for small culinary businesses to create a new location for their business on the Westside, expand their offerings to the public, test market a new concept or product or simply make their home for focused service on a limited basis. Rentable by the hour with face to face service through our Dutch Door, it is an al fresco experience similar to a food truck with tailored support and access of the shared kitchen.
Estrella Gathering Space
Estrella is our beautiful second floor gathering space with gorgeous views of the Southern Front Range mountains, transformative light and an elegant, but cozy atmosphere. It is the heart of our mission supporting culinary innovation and incubation providing a platform for multiple businesses to grow and scale their vision through small to medium scalable events, educational opportunities and co-working/gatherings.
A boutique gathering space, seating twenty five in the main dining room and eight in the private dining room, this beautiful space is the perfect spot for intimate parties, supper clubs, Chef’s table events, traveling chef dinners, introduction of new restaurant concepts, small baby/wedding showers, retirement parties, ongoing meetings and prix fixe dinners. It is one of three dining areas in the house that offer small culinary businesses the opportunity to host private dinner parties with growth opportunities as they desire to serve larger parties.
Graced by a fireplace nook with comfy soft seating, height-adjustable tables and vintage chairs, a Butler’s Pantry equipped with a full in-house bar service with specialty cocktails/mocktails, beer and wine, state of the art audio/visual presentation equipment and a catering kitchen to streamline event service, Estrella provides a wonderful environment to host small events that is unique to its design and location.
