About us

Pop was founded by Amy Kunstle, RD, MA, CCC-SLP to create positive and joyful dining experiences that are accessible to all in a historic building that was carefully renovated for long-term sustainability, equity, beauty and purpose-driven functionality. She has spent a lifetime working in private practice as a registered dietitian and certified speech-language pathologist specializing in evaluating and treating pediatric feeding, adult dysphagia/swallowing, voice and early language/articulation and fluency disorders.

She is the founder and curator of 3D SLP, a literacy-based subscription box used to expand early language and literacy learning through applied use of language-based materials and a strong advocate for promoting language and literacy opportunities across venues.

Throughout her career in patient care and private practice, she was given the opportunity to mentor specialty contractors as they learned how to organize and operate within the paradigm of private practice. Many contractors went on to open their own practices expanding services available to the community and deepening the resources for speech-language therapy options in Pueblo, Colorado.

This was the beginning of understanding the potential of what could be possible in approaching the practice of nutrition, equitable feeding opportunities, better communication and language and literacy into the community through a community approach by opening a restaurant designed to present healthy, sustainable and delicious options linked to the vibrant food system of community farmers, ranchers and apiaries in a manner that also promoted good communication through proper building design. It also deepened the possibilities of lifting the load for other small businesses by creating a restaurant that was also a shared kitchen and culinary incubator to help other small businesses have a building and tools to scale their businesses to their goals.

Pop has many objectives in its mission and vision. We are grateful to be part of the beautiful Old Colorado City and Westside neighborhood supporting and sharing the vision of our community to the best of our abilities.
